For decades now, most of their gorgeous wines have been snapped up by eager locals in Burgundy (and they’re a tough sell), but ACME acquired a tiny amount that made it to our shores. Winemaker Fabrice Bouard and his wife Carinne Bonnefoy sustainably farm just twenty acres of coveted vines in Chassagne-Montrachet that have been in her family for four generations. Fabrice’s first career was as a bodyguard for French dignitaries, and he is equally protective of the quality of the fruit he cultivates. Upon arrival to their cellar, the Chardonnay grapes are gently crushed and then lightly pressed in a time-worn upright wooden press inherited from Claire’s grandparents. For all their white wines, native yeast kicks off the juice’s fermentation in a mixture of older barrels and 20% new wood for a perfect balance with each vintage.

Perched at the crest of an undulating slope, you’ll find Domaine Bouard-Bonnefoy’s Premier Cru ‘Vergers’ vineyard. With its younger vines, the fruit delivers an energetic yet profound white Burgundy with notes of crushed stones and yellow fruits.
